Ten Little Celebrations – December 2023

December has been one of the most unusual (and stressful) of my life. Along with all the upheaval – there were still little celebrations to notice and savor.

Completion of a construction project. Big machinery digging in the street/sidewalk, the alleyway, and backyard of my parents house. The city was replacing an old sewer pipe. It was interesting to watch…although there were a few anxious moments too. We all celebrated when they finished within the 3 days they’d estimated for the project!

A warm day to mow the leaves. The leaves didn’t really begin to fall in Carrollton TX until December. We celebrated a warm day to mow them into the yard.

Crystalized ginger, big peppermint sticks. I savored special foods from the past that I haven’t eaten as much in recent years. I bought the crystalized ginger and a sister provided 6 of the big barber pole peppermint sticks. I started the celebration of my birthday early!

Red velvet cake. When I was growing up, my usual birthday cake was red velvet cake – made by my mother. This year one of sisters and her husband discovered a diner that had an excellent version of the cake – and bought me two pieces – which I enjoyed 2 days in a row prior to the actual birthday!

A break. My other sister came to make lunch for my parents and I took a break away from my parents’ house. I went to a small café for brunch and they had a special: birthday pancakes! I opted to get that special (another early birthday celebration) and thoroughly enjoyed it. Then I walked (and took pictures of birds) around Josey Ranch.

December celebrations. My birthday is just one of the normal December celebrations in my family. There is also my parents’ anniversary (their 71st) and Christmas! It’s always a hectic month…full of family visits.

Good sleep. I usually sleep well but it has not been as consistent this month….so I celebrated a particularly good night!

Fall foliage of crape myrtles. I’d never noticed crape mytles in the fall before. At my parents the conditions must have been just right for them to turn from green and hold their leaves this year. I celebrated how great they looked with the leaves and seed pods.  

Finding assisted living. Change is hard. We had moments of discovery and panic…celebrated finding an assisted living group home for my parents and then realizing that the details required another burst of energy. As I write this we are all celebrating how much we have accomplished with our combined efforts.

Daughter arriving. My daughter came for my birthday and the anniversary. She took me out for Ethiopian food to celebrate my birthday!

December 2023….what a cresendo for the year!

Ten Little Celebrations – January 2022

As I look at my list of little celebrations in January 2022, I am realizing that my surgery stands out so significantly that getting through the surgery itself (the 1st surgery, the reopening of the incision to release blood, the 2nd surgery) is the major celebration of the month! There are little celebrations around that big one: a sunrise and good grocery shopping experience before the surgery, an excellent chicken soup I made a few days after coming home, the hematoma beginning to fade (although it is still not completely gone 2+ weeks afterward…I am checking/celebrating progress every morning), and my first grocery shopping after the surgery (with the assistance of my husband).

The other celebration that stands out this month….more than a little one…is the death of our cat, Boromir. I was glad I held him close for over an hour on his last day….that he seemed at peace. We are still missing him but also celebrating that Boromir was with us for so many years and particularly through the pandemic when we were at home most of the time; he contributed to the positive vibe that seemed so natural…so easily sustained.

And then there were some ‘usual’ little celebrations:

A great meatloaf. I discovered that adding a little olive oil if the ground beef is very lean and using spaghetti sauce instead of salsa improves the texture and flavor!

Red velvet cake/carrot cake for our 49th wedding anniversary. We both savored our slice of celebratory cake…not having any leftovers!

Peppermint snow ice cream. Celebrating a seasonal favorite and plenty of snow to make it!

A new garage door. It was awful to have a damaged door….I celebrated that we could get it replaced quickly.

Snow on the ground. Celebrating the beautiful scene from the windows of our house….and the different perspective as I walked through the neighborhood.

Celebrating with Cake

Three days after my cancer surgery – I reminded my husband to do a pickup order from a local grocery store that included a slice of cake for each of us: carrot cake for him and red velvet for me. We were celebrating our 49th wedding anniversary! We’ve never done huge anniversary celebrations, but this was more truncated than usual since we were in the mode of assuming I might have been exposed to COVID in the hospital.  We were masked when we put the cake slices on plates and took pictures…congratulated each other on the milestone…then we each retreated to separate floors of our house with air purifiers running full tilt to enjoy the treat.

Favorite Foods of December 2021

November and December and January are probably the peak months for me to try some new recipes…and making old favorites…enjoy ramping up the foods we enjoy in winter!

Rice Pudding

I had a container of left-over rice from a Chinese food delivery on the Friday after Thanksgiving. I knew I wouldn’t eat it right away, so it went into the freezer. A few weeks later I decided to make rice pudding (recipe). It started out easy since the rice was already cooked. I used cinnamon instead of nutmeg and honey instead of white sugar called for the recipe and didn’t measure the raisins (probably added at least double the amount!). The results were yummy but could have used even more raisins (I added some to the top of the serving in the picture). Next time I make it I’ll round up on the milk as well. It seemed a little to dry for ‘pudding’!

Quiche

I made a quiche with what I had in the refrigerator and pantry…made up the recipe as I went along. It turned out to be high protein!

  • 6 eggs

  • 1 cup milk

  • 1+ cup ‘Mexican blend’ grated cheese (didn’t measure just make a layer of cheese that I mixed with the veggies before I poured the egg and milk mixture over it)

  • 1 red bell pepper

  • 1 cup shelled edamame

  • Pumpkin seeds on top

Yummy and colorful too!

Chocolate Mousse (made with avocado)

Yummy 2 servings of the dark chocolate treat (I made half the recipe…using honey for sweetener and cocoa powder as the chocolate) and ate it over 2 days for 1st breakfast rather than my squares of Lindt Dark Chocolate. It turns out that is slightly less calories than the Lindt! It appeals to me because the ingredients are so straightforward….not as processed as the commercial chocolate.

Red Velvet Pancakes with Cream Cheese

I started with this recipe but then modified it because I wanted to use beet root powder rather than red food coloring….and add a citrus note to the flavor….and avoid refined sugar. Here’s my markup of the ingredient list (I didn’t end up using any milk in the glaze even though I forgot to mark it off).

It was partially successful. I didn’t like that the pancakes turned brown on the outside (they were red on the inside). The big success was the ‘cream cheese glaze’ which melted very nicely over the pancakes and the orange flavor was wonderful. I will be using it on gingerbread cookies (and anything else I want a little touch of sweetness); it would be excellent on raisin bread toast, for example.

Anniversary Celebration

My husband and I have been married for 48 years! We celebrated a day early with red velvet cake (for me) and carrot cake (for him) that we enjoyed a day early because that is when we did a pickup of other items from a store that included a bakery that makes good cakes.

I’m thinking back to the decades of our marriage

We spent the 1st 10 years in Texas. We were both in college – he was full time and I was part time. My career in computer programing was becoming well established. At the end of the 10 years, he had a PhD in Physics and I had a Masters in Mathematics.

Early in the 2nd 10 years we moved to Virginia for his post doc and I went to work for IBM. During the decade we moved to Maryland (after his post doc ended) and had our daughter.

The 3rd decade saw us moving in Maryland to the house we are in now. Our lives were focused on our daughter and our careers…trying to blend everything together at every opportunity. For several years, my work required trips to Colorado once a month. My husband and daughter joined me for before or after the workdays so often that my daughter thought everyone got on an airplane for Colorado frequently – was surprised that she was the only one in her Montessori class with Colorado t-shirts and sweatshirts. Our daughter was old enough to consider putting her on a plane to see her grandparents in Texas by the time 9/11 happened; we delayed that milestone to well into the next decade.

Our careers were important during our 4th decade – but the milestones of our daughter took the fore in our family: driver’s license, high school graduation, Cornell for undergraduate degree, internship at Northern Arizona, beginning graduate school at University of Arizona, marriage. My husband began his glide path to post-career. My last grandparent died. We dealt with some health issues of our own that slowed us down temporarily. I retired in the last year of the decade.

In the past 8 years, I’ve settled into post-career activities including volunteer gigs. My husband continued to work part time for a few years and ramping up of post-career. We both enjoy traveling (birding festivals in particular) until the pandemic stopped that; we’ll pick it back up in a year. Our daughter’s milestones were ones we shared vicariously: PhD in Astrophysics/her husband’s PhD in Biology, post docs at Penn State/University of Pittsburg, tenure track faculty positions at Missouri State University. Our health has been stable, but my sisters and I are partnered to assist our aging parents as they face health-related challenges.

We’re enjoying the Tennessee Wildlife Resources Agency’s Online Celebration of Cranes right now and are tentatively planning to be at the in-person festival next year to celebrate our 49th anniversary!
